On our first trip to Paris, we discovered the Parisian Macaron. Unlike the coconut American counterpart, the Parisian version is a soft, slightly chewy almond meringue in the most vivid colors imaginable.

Upon returning to the States, we became determined to reproduce this specialty using ingredients from our neighbors at the Farmer's Market; whole almonds from Lagier Ranch, eggs from Eatwell Farms and seasonal fruits and flowers fresh from the market. Our modifications were modest: we craved a bit more texture to sink our teeth into, we wanted the almonds to shine as the primary ingredient and would do away with the awful food coloring. Our result was a delicate treat that a fellow pastry chef once referred to as "like sinking into the softest down pillow."

Our standard flavors are Vanilla, Hazelnut, Pistachio and Chocolate with additional seasonal flavors varying by the time of year.

For those with wheat allergies, our macarons are completely gluten free.
